Man’oushe Za’atar

Method

    Mix flour, yeast, sugar, salt, water and oil. Knead until smooth, then rise for 60 minutes.

    Heat the oven and a baking stone or inverted tray to its highest setting.

    Divide into six balls and roll each thinly.

  4. 04

    Mix za’atar with olive oil, spread over the dough and bake for 5–7 minutes. Keep the bread soft enough to fold.

The useful detail

Za’atar blends vary enormously. Taste yours before adding salt, and look for one in which sumac and herbs remain vivid.
